This shaved raw Brussels sprouts salad was inspired by Food 52 member, Michael Hoffman, and his recent raw broccoli salad post. Sliced the sprouts in the cuisinart, added sliced toasted almonds, bits of pecorino and blue cheese and tossed with a vinaigrette made with champagne vinegar, olive oil, Dijon mustard and bit of sugar..salt and pepper to taste. Love these raw crunchy salads! Did not have bacon...will throw some in next time! Might add dates too.
