Tuna-potato cakes.......a good way to use left over mashed potatoes.....
1. Mix potatoes w/egg, chives or scallions, breadcrumbs, lemon zest & Italian tuna packed in oil.
2. Press patties in panko and fry in olive oil/butter combo until browned & crispy
3. I served w/ a sauce of lemon juice and scallions mixed w/ mayo
*can be made ahead and reheated in oven
