Based on the Andalusian gazpacho recipe from Epicurious, I buy the bags of "sauce" tomatoes from my local greenhouse farm. Put about 5 medium cored tomatoes, along with a peeled and seeded cucumber, coarsely chopped sweet onion, a seeded hot pepper, crushed clove of garlic, several tablespoons of Spanish sherry vinegar, salt to taste into my Vitamix and blend until smooth. Add about 1/4 cup of good olive oil through the lid and then chill for a couple of hours. Serve with chopped green onions for garnish and if you have a nice oil to drizzle (I used Persian lime olive oil) even better!
