Tomatoes all week - Tomato & turkey ragout over raw spinach salad w/ cherry tomatoes.
For salad: Organic raw spinach topped w/ cherry tomatoes, chopped green onion, Maldon salt, pepper & drizzled w/ lemon & o.o.
For ragout: Combine tomato sauce, crushed tomatoes, 1/2 bottle dry red wine, generous portions of oregeno, sage, basil & thyme. Season w/ s&p to taste. Cook down for at least an hour, adding liquid as needed(water, or beef broth or wine - whatever you have).
Had over pasta for dinner. Now today for lunch its spinach salad :)
