Sauce Vert is the basis for many of my summer fish dishes. A green herb or two (here, basil and parsley), an allium (today, shallots), an acid (lemon zest and juice), capers, Dijon mustard and olive oil. The carrots were marinated in honey, thyme and sherry vinegar and then pan roasted in olive oil. Zucchini Flan was a take on an old NYT Food recipe. #Halibut #farmtotable #greensauce #zucchini #summer
