In solidarietà con Italia..spaghetti all'Amatriciana 🇮🇹🇮🇹🇮🇹
Dice about 4 ounces guanciale or pancetta. Sauté with a little bit of extra virgin olive oil on low until the fat has rendered. Add in a few good sprinkles of red pepper flakes then 1 (28 ounce) can whole tomatoes (preferably San Marzano). Simmer for about 15 minutes. In the meantime, bring a large pot of salted water to boil. Cook the spaghetti until al dente according to package directions. Add to the sauce with some of the pasta water. Cook for a few minutes. Serve with plenty of freshly grated Pecorino cheese.
