Part one of a pizza made with. Cauliflower crust. The crust is done and turned out nicely. 1 head of cauliflower cut into florets, salt and pepper, olive oil, grated Parmesan, the florets covered with foil for 25 minutes. Remove from oven remove foil and drizzle with olive oil and some grated cheese and continue to roast until lightly browned and cauliflower is soft. Refrigerate overnight covered over a strainer in case there is any water in the cauliflower. To make the pizza crust blitz the cauliflower in the processor pulsing until broken up, scrape into mixing bowl and add an egg, more grated cheese, grated mozzarella or I used taleggio and 2-4 tbs of spelt flour and mix until combined. Heat oven to 425 lay parchment on baking sheet, I used cast iron pan. Spread it into the desired shape, grate a little more cheese on top and bake for 20-25 minutes. Transfer to cooling rack. Well once you put the toppings in and bake it the ends are easy to hold but the middle tends to get a little soft. I did pick it up with my hands and eat it but it drooped. I ended up with cork and knife for the softer part and my hands loft the more sturdy part.

Can you pick it up with your hands? Or is it a fork and knife deal?

Oh forgot to mentioned you use the whole head add 2 eggs I used half and froze the rest.
