I don't want to usher in the cold weather but when beets, carrots and cabbage show up in your CSA borscht isn't an option, it's a MUST! I grated the beets, carrots and onions, cooked them with a little olive oil then added the cabbage and some veggie stock and let it simmer. Salt and pepper then top with sour cream (I use Greek yogurt because I'm like that) and some dill because I happen to have some of that too! Delicious! A childhood favorite.
