Prawn, avocado and quinoa poké. Cook a mix of red and white quinoa, and mix with 1 tbsp rice vinegar and a tsp sugar. Marinate cooked prawns for 5 mins in a mixture of 1 tbsp soy sauce, 1 tbsp toasted sesame oil, grated ginger, chopped chilli and a finely chopped salad onion. Toss half a chopped avocado in the prawns along with some chopped coriander. Arrange in a bowl the quinoa, some cucumber chopped into matchsticks, edamame beans (or fresh peas), baby gem lettuce leaves and the prawn avocado mixture, along with the dressing. Stop with toasted sesame and pumpkin seeds.
