Okonomiyaki, aka my favorite fridge cleaner meal. Take a quarter head of cabbage and slice into slivers. Mix one egg, flour, and dashi stock to make a slurry, then add cabbage and whatever leftover protein you have (smoked bacon and carnitas on my case). Oil and heat a non stick fry pan until hot, then evenly flatten the mixture and cook over medium high for about 4-5 minutes. Flip (or slide onto a plate, invert your frying pan over it, then flip the whole thing) and cook the other side for another 4-5 minutes — you want a bit of char and crisp without over cooking the cabbage. Serve with nori, bonito flakes, mayonnaise, and okonomi sauce (aka ketchup and Worcestershire; teriyaki is a good substitute.)
