i teach at a large state university, which means i'm back to the grind tomorrow. fired up the oven for a sayonara-summer baking bonanza. a loaf of soft white is in there now; i've got my homemade animal cookies in their Ball jar, ready for the office; and these perfect muffins are cooling down.
i kicked off my summer with an amazing, solo trip to Maine to hike Acadia. on my last morning, my B&B innkeepers served up their yummy poppyseed muffins. it seemed only right that i book-end the summer with some of my own. when the semester gets rolling, pulling a muffin out of the freezer and popping it straight into the oven to toast up is one of my favorite quick breakfasts. #notarecipe
