We made spring rolls for dinner last night, and we used the leftovers to make a summer salad for lunch. We started with a bed of arugula, and then we added the leftover rice noodles, shredded carrots, leftover sautéed greens (kale, chard, and radish greens) and mixed chopped herbs (basil and cilantro). We topped the salad with diced avocado and chopped peanuts.
