spicy sausage and rice stuffed bell peppers with cream cheese
at work the other day we got some pre made stuffed bell peppers and they were very basic and tasteless, so I decided to go home and do it some justice in my own way with things I already had at my house
I started by making Spanish red rice, I start by frying rice with diced onion and garlic until rice is browned, then I add powdered chicken boullion, a splash of tomato sauce and water then cook rice.
I found some ground mild Italian sausage and some spicy andouille sausages, so I cut the andouille sausages into tiny pieces and cooked in in a pan with the ground sausage, minced red onion, red pepper flakes and a few smashed garlic cloves. once the sausage was fully cooked through I mixed in the red rice. right after I threw in just enough cream cheese to get the rice and sausage to stick together, threw a small handful of mozzarella cheese and a large pinch of parsley and mixed
I didn't have large bell pepper but found some baby ones so I cut them in half, hollowed them out and stuffed with mixture, baked at 350 for about 15 minutes and bam, shit was bomb
