Remove corn kernels from the cob... Make a corn stock from the cobs and water with a little lemon thyme... Sauté shallots and skinny butter... Put the stock, corn and shallots in a blender... Purée till smooth... Serve warm or at room temperature with lobster medallions and fresh Lemon time.
