Roasted mini-eggplant

Cut in half, brush with olive oil, sprinkle with sea salt. Roast for 45 minutes or till soft. Scoop out, add parmigianno and romano, garlic, salt and pepper to taste. Spoon back into eggplant skin.

Sprinkle seasoned breadcrumbs on top, bake for 10 minutes to brown.
