Quick dinner when other options look bleak. A thick slice of bread, top with spicy salami and cheese! I always keep a variety of cheeses that melt nicely on hand (young Gouda, Comte, Raclette) and some different types of salami since it all keeps for a while and makes for a quick and delicious meal. A vegetarian one could be made easily with some pesto or roasted eggplant added in lieu of the salami. I always serve these open-faced sandwiches with homemade pickles (dill or bread and butter) to cut the richness.
