Pecan Pie Bites
Delicious, high energy snack for today's hike.
1 cup medjool dates
1 cup pecans
2 tbs hemp seeds
2 tbs flax seed meal
2 tbs maple syrup
1/2 tsp vanilla extract
1/8-1/4 tsp salt
1/2 cup *cashew flour or almond meal
*Gently toast flour for crust-like flavor
Process all ingredients except cashew flour. Combine into a dough. Roll into balls. Roll in cashew flour to form the "crust". Chill until firm. Enjoy!
