Pickled red onions
White vinegar and water brought to a boil with peppercorns, mustard seeds, cumin seeds, chipotle sea salt, and a couple spoonfuls of sugar. After it started to boil I added in 2 thinly sliced red onions and then spooned it into jars and refrigerated them overnight.
