sardines with buttermilk sauce and lemon gel
Sardines marinated elderflower cordial and vinegar for 20-30 mins. Wrap an unpeeled garlic clove in foil and bake for 20 mins until soft. Squeeze the garlic into 300ml of buttermilk. Heat fresh lemon juice with agar agar until all the particles are melted. Cool then blitz to make a gel. I finished this dish with some homemade roasted onion powder and blanched radish for the crunch. It's also great with shards of Apple. Enjoy 😀
