Late summer "tangine"
Deborah Madison's creation took care of my CSA haul. Mix and roast sweet bell peppers, tomatoes, celery, and fingerling potatoes with a delicious paste: puréed garlic, cumin, pimenton, cilantro, lemon juice, olive oil and salt. I think this would also be terrific with garlic, ginger, lemongrass, and Thai basil.
Serve with your favorite starch--rice, cous cous, crusty bread!
