While spaghetti is cooking, melt a couple tablespoons of unsalted butter in a pan, add 3-4 cloves of minced garlic, salt, pepper and some truffle oil. Once garlic softens, ladle some pasta water into the pan and let sauce cook down. When pasta is just about ready, use tongs to transfer pasta from water to the pan. Add a tablespoon more of truffle oil and mix vigorously until spaghetti is coated well in the glossy sauce. Top with pecorino and more black pepper. Best served with a giant glass of wine 🍷
