Whisk together generous amounts of water, soy sauce, mirin, garlic chili paste, sesame oil, and some finely minced ginger. In a pan sauté sliced mushrooms with a few cloves of minced garlic. Add sauce and let simmer for 10ish min. Meanwhile, cook udon noodles according to package. While both pots are doing their thing, dry toast some sesame seeds and slice scallions. When noodles are done, add to the pan with sauce and mix until well combined. Top with toasted sesame seeds and scallions. Best eaten with ice cold beer and no pants 👌
