Zucchini Cornbread Muffins with Queso Fresco
Cornmeal muffins can, at times, be a bit dry. Adding grated zucchini and crumbled queso fresco makes these sweet muffins moist and savoury.

1 cup all purpose flour
1 cup cornmeal
2 tablespoons sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 cup buttermilk
1/4 cup vegetable oil
1 egg
1 cup grated zucchini
1/2 cup crumbled queso fresco

Oven 425
Prepare muffin pan with liners
Blend wet and dry ingredients together
Fill 2/3 full and bake 15-18 minutes
