One skillet steak and potatoes with pan sauce. Preheat oven to 350'. Heat a cast iron skillet on high and get a good sear on a steak (this is a top sirloin). Add a sliced onion, diced russet potato, sliced fennel, a few glugs of olive oil, salt and freshly ground pepper and toss in your favorite herbs around the steak. (I used thyme and oregano partially dried from my garden). Place in oven and cook until steak is 140'. Remove steak and let rest. Add cherry tomatoes to skillet, crank up oven to 425' and roast until vegetables are done and begin to caramelize. Thinly slice meat and serve with vegetables and pan sauce.
