Poached pear yogurt mousse with speculoos crumble… toasted oats, flour, cinnamon, nutmeg, baking soda/powder, salt in coconut oil and caramel sauce until golden, speculoos stirred in while still warm… leftover poached pears, cornstarch, dried cranberries, cinnamon, nutmeg, reduced spiced caramel sauce (from poaching liquid), orange juice, heated up, roughly mashed and left to cool… blend together caramel sauce, cream cheese, speculoos, add Greek yogurt, orange juice, vanilla extract… fold in fruit… was too tart, so I whipped coconut cream and folded that in… topped with a layer of vanilla goat milk yogurt and speculoos crumble
