Make your own labneh!
Line a colander with muslin or a cheesecloth and place over a deep bowl.
Mix together salt with Greek yogurt and pour into the muslin. Press the yogurt down with a mortar or any heavy object and leave in the fridge for 24 hours. Once the whey water has completely drained out, take the now firm yogurt and roll into balls.
Mix together equal quantities of sumac, dried chilli flakes, and dried mint and roll the balls gently in the spice mix. Refrigerate until ready to serve.
