This is just sautéed eggplant for my eggplant Parmesan. It was so yummy just on its own! Sautéed in a mix of butter and olive oil. Dredged in flour seasoned with salt and Pepper, egg wash seasoned with 21 Seasoning Salute from Trader Joes, and finally dredged in Panko and Parmesan cheese. I did salt them and let them sit for 45 minutes to release moisture. I did make the Parmesan but also left some on their own for eats. I am not a huge eggplant fan but this was sooooo good!
