Beef and chicken stock added along with thickly sliced yellow potatoes (skin-on). Oregano, thyme, and bay leaves provide aromatic flavor. Bring to gentle boil, then simmer until potatoes are cooked through. Add shredded kale and 1/2 cup of half-n-half and allow to simmer for another 20 min. If you like spicy, add red pepper flakes with the other spices. Season to taste with kosher salt and freshly ground black pepper.
