If you bought too many tomatoes, make a bed for your brisket. Roast them for 20 minutes with 4 chopped garlic cloves, EVOO, and some thyme & parsley. After you sear your 4-pound, sea-salted brisket, put it to bed (with 4 cups beef broth) and slow cook for +3 hours.
