Zucchini pancakes two ways. The one on the right is super simple - shredded zucchini, egg, and breadcrumbs, topped with ricotta and lemon honey. For the one on the left, I added shredded onion, minced garlic, grated Parmesan, parsley, and tahini to the batter. It's topped with a light smear of mayonnaise, soy sauce, and Sriracha.
