This is Sunday supper. It feels like forever since I have made any dinner that resembles a proper Sunday meal. So when I awoke today I put this tiny veal roast(1.5lb) into a sous vide bag, with garlic, basil and thyme, and gave it an eight hour sauna at 129F. When it was done I browned it in a very hot cast iron pan, seared it on all sides, and chucked it into a low oven so I could finish the Trofie pasta, peas, and prosciutto. The hero move here is to take the bag juices(yep, I said it, bag juices) and make a pan sauce. The sauce isn't so much for the veal but for the pasta. A veal jus, white wine, mustard pan sauce rocks the noodles world. #sundaysupper #pasta #italianamerican #franksinatrawoulddigthis
