The are lots of things I like about this bowl of noodles. One, the beef broth is made with 2 tsp Better then Bouillon base mixed with 2 cups of water(it lends just the right amount of shitty that every good bowl of noodles needs.) Don't that put you off because when you add 1 1/2 tbs. of fish sauce, 2 tablespoons of soy, and a splash of rice vinegar and it's just like something you would eat in streets of Hanoi.(I have never been but I would imagine them like this). I like to use those big square rice noodles and I use 8 ounces of them, pour boiling water over them and let them steep while I stir fry 2 tbs. garlic, 1/2 red onion, two cups of anything in the Asian cabbage family, and a block of tofu cut into 1 inch squares until the vegetables are soft and the tofu hot. Add 1 tbs of corn starch to the broth pour it over the stir fry and bring it to a boil. Add noodles, heat through and top with Fresno peppers and cilantro(or don't but that would sell this dish short and insult thousands of Asian street vendors. #noodles #tofudoesntsuck #asian #30minutemeal
