classic scrambled eggs. break eggs into a small non-stick pan/pot, add a knob of butter, and stir over medium heat until it's almost at your desired done-ness. then add chopped scallions, salt, and pepper to taste. serve over toasted english muffins, sourdough, or any strong bread, and top with more scallions and freshly cracked pepper.
