Sesame noodles with stir fried veggies. Julienne whatever veggies you have lying around (I had a red onion, a red chile, and summer squash) and stir fry in a high heat oil with a dash of sesame oil. Toss veggies with your favorite noodle (I used a rice noodle). Add sauce and toss (soy sauce, fresh garlic and ginger, peanut butter, tahini, chile garlic paste, sesame oil, rice vinegar). Plate, pile high with julienned cucumbers, cilantro, green onions and peanuts.
