Butternut, black bean, spinach vegan quesadilla
Mash butternut squash, mash black beans coarsely, chop spinach roughly. Dice and sautee red onion until tender. Mix squash, beans, spinach, onions together. Lay whole wheat tortilla flat in large cast iron pan. Spread mixture on half of tortilla and sprinkle vegan cheese on top before folding tortilla over and grilling until crispy and melty.
