The humble egg roll - baked not fried. Ground pork, shredded green and purple cabbage, shredded carrot, and scallions stir fried with a few tablespoons of oyster sauce, minced garlic and ginger, and 1 tsp of sesame oil. Let mixture cool, roll into egg roll wraps, spray lightly with olive oil and bake at 400 degrees for 20-25 min until golden brown. Serve with dipping sauce made with soy sauce, sambal oelek, sesame oil, toasted sesame seeds, and a sprinkle of scallions. Make a ton, bake some, and freeze the rest for later!
