Spaghetti alle vongole, or what happens after you go camping and stop at Hog Island Oyster Company on the way home. Start by gently simmering garlic and pepper flakes in olive oil, then add white wine and clams and bang on the lid. Check every 30 seconds or so, removing cooked clams as they just open. Remove most of them from their shells (less work when you're eating them!), then add the clams, cooked spaghetti, and some pasta water into the white wine sauce. Stir vigorously until the sauce emulsifies, add parsley and serve immediately. 👌🏼
