Homemade chicken stock....Zuni Cafe method. Getting ready for fall soups and stews.
2 large Spanish onions, quartered
2 large carrots, cut in 2 inch chunks
2 large celery stalks with leaves, cut in 2 inch chunks
4 teaspoons kosher salt
2 whole chickens. Remove breast meat and reserve for another use.
