Deconstructed "Stuffed Bell Peppers." Make meatballs. Brown them and then stew them in bell peppers, chick peas, and diced tomatoes. Add garlic and dry oregano and S&P to round it out. Or, go vegetarian/vegan and forget the meatball. Total yum either way.
