Car camping is essentially an excuse to feast outside. For these moules marinières, I like to prep and pre-cook the mirepoix (or in this case, shallots, leeks, and garlic) at home first, so all I need to do is grab fresh mussels, a loaf of bread, and a bottle of white wine on the way to camp. Heat up your mirepoix, add mussels, wine, and a pat of butter, and just wait for the little yummies to open. Serve with parsley and fire-kissed bread, and slurp up the warm briney broth as the sun sets and temperatures dip.
