Veggie filled "sushi". Take veggies from your fridge: I had kale, cucumber, zucchini, carrots and an avocado. Cut veggies into sticks. Make some rice. Chop leafy green veggie and mix with a combo of mayo and sriracha (2Tbsp mayo plus 1 tsp sriracha).
Spread a few spoonfuls of rice on top half of nori sheet (leave half an inch towards the top) and press down to pack it. Add a heaping layer of the leafy green mayo mix, top with your veggie sticks. Roll sheet into a cylinder, you may need to wet the edges so it sticks. Cut into bite sized pieces. Enjoy with dipping sauce of choice, but wasabi and soy sauce is a great option!
