An incredibly easy way to cook fish: oil-poaching! Put fish fillets (very pretty tuna, here) in a ovenproof dish, add an 1/8th of an inch of olive oil (along with any seasonings—woody herbs, garlic, maybe a chile!), and shower with salt and pepper before baking in a 275 F oven for about half an hour (or less, for a slightly rare fish), basting the fish regularly.
