Stuffed delicata squash:

Mix together the following; cooked quinoa, riced cauliflower, bell pepper, jalapeño, garlic, celery, green onion, goat cheese. Salt and pepper to taste, mix in chicken stock and evoo. Bake at 400, until squash is tender.

Serve with your choice of protein, or salad.
