Seared scallops over eggplant ragout:
Ragout: onion, garlic, Roma tomatoes (cook down, immersion blender together), cubed eggplant, white wine, tomato paste, anchovy paste, fresh herbs, salt/pepper/cumin/red pepper flakes/1tsp honey. Simmer.
Served over Trader Joe's Harvest Grains mix.
Salt and pepper scallops, light coating of corn starch, sear until lightly golden on each side and opaque.
Shaved Parmesan and parsley to garnish.
