My go-to single plate dinner: grilled chicken with Dijon sauce, brown rice topped with sesame and black pepper, arugula with white balsamic vinegar.
Dijon sauce is so versatile. I pout it on meat, omelettes, salads and even spread it on toasted baguettes.
Sautée 1 finely chopped onions, add 1/4 cup Dijon mustard, 1 cup white wine, juice of 1 to 2 lemons, 1/4 cup soy sauce (or less, according to taste), salt, pepper. Simmer for about 10min, add fresh thyme leaves and serve. Can keep in fridge - I even freeze it.
