Shaved Brussels sprout and Tuscan kale salad - thinly slice Brussels sprouts and kale, toss with Dijon mustard vinaigrette and let sit for 20 minutes or so. Add whatever you like to make it a meal. I added grated parmigiano reggiano, chickpeas, chopped cucumber, grape tomatoes, sliced turkey breast, and sliced turkey pepperoni. Salt and pepper to taste.
