Pão de Queijo - Brazilian cheese bread. Completely gluten free if you bake it the Brazilian way with tapioca flour. Uses milk, butter (or can be oil), salt, eggs and cheese (I use Parmesan but can be other). Comes out so light and tasty. Freezes well too, but should be eaten straight out the oven either way.

Hi Jim, I used to have a recipe from a Brazilian friend scribbled on a piece of paper. It's gone now and I kind of wing it from memory. Depending on the weather and altitude (we move a lot), the ratio would be starch 3-4, milk 1, oil 1/2, grated cheese 1-2, in cups (I'm not a real baker, I don't do it by weight). I'll use about 2 eggs and a teaspoon of salt. Warm non dry ingredients over heat. Add to starch + salt, mix and then add eggs, and finally add cheese. Shape into ping pong balls and bake. I'm sure there are better recipes out there in the wild....

Hi Jill. I feed swimmers too and cheese balls never make it to the freezer unless it's swim camp season!
