[I used this recipe](https://food52.com/recipes/34008-garlic-noodles-with-shrimp) as a base.
Sauce is soy sauce, oyster sauce, tons of garlic, and sesame oil. I added a shit-ton of gochugaru because I love gochugaru.
Pat the shrimp dry and add to a bowl of salt, pepper, and a ton of turmeric and coat evenly until all the shrimps are yellow.
In batches, fry the shrimp in olive oil until just cooked through. Remove from pan and set aside and drain some of the oil out of the skillet. Add the sauce/garlic. (I forgot the scallion) and cook until thick. Add reserved pasta water and stir quickly to make sure the sauce is an even consistency. Add baby spinach leaves and cook until just wilted and then add the spaghetti noodles, using tongs to coat in the sauce. Add the shrimp and toss very lightly. Divide between plates and garnish with sliced scallions!
