Make your favorite pie crust but blend white flour, whole wheat, and buckwheat for a more rustic flavor. Sneak in some powdered ginger too.

For the apple mix, use a variety sliced to about 1/2 inch and throw in 10 white grapes just because. Toss with cinnamon, sugar, brown sugar, salt, lemon juice, flour, etc. Instead of nutmeg try 1/2 tablespoon of crystallized ginger and a teaspoon of powdered ginger.

Cut vents then brush with an egg/milk mix and sprinkle with choice of sugars (I used regular and light brown). Bake 425 for ~20 minutes on a preheated baking sheet on the bottom rack then rotate and bake at 350 for ~45 on middle rack. Cool for several hour so it sets. Serve with vanilla ice cream.

1 cup whole wheat, 1 cup buckwheat, 1/2 cup white for crust. Next time I'll probably swap quantities on the buckwheat & white. I also used 1/4 cup whole wheat flour in the apple mix.
