Braised Pork Tenderloin with sauerkraut, gala apples, onions and Oktoberfest pilsner. Sautéed Brussels sprouts with bacon. Roasted sweet potatoes.
Brown the pork tenderloin in olive oil. Add sauerkraut, apples, onions, caraway seed, brown sugar, salt, pepper and paprika to Dutch oven and cover with German beer. Nestle pork tenderloin in kraut and apples. Braise in 325 oven for 1.5 hours. Take out pork and rest. Boil remaining liquid and kraut mix to evaporate a little. Arrange sauerkraut and apples on platter and top with sliced pork tenderloin.
